Blueberry Coffee Barbeque Sauce

3 Pints - Fresh blueberries
1 C - Community Coffee New Orleans Blend with chicory, brewed
1 C - Fruit blossom honey
3 - Roasted Bananas
½ C - Steen's cane vinegar
½ - Yellow onion, chopped
4 T - Tomato Puree
1 T - Chili powder
½ T - Cayenne
Salt & Pepper to taste

Method
In a pot, cook onion and blueberries over medium heat until onions are translucent.   Add tomato puree and cook five minutes.  Add cane vinegar, honey, brewed coffee, and roasted bananas.  Bring to a simmer and stir in seasonings.   When thickened enough to coat a spoon (aprox. 10-15 minutes), remove from heat and purée. 

Roasting Bananas
Heat oven to 350 degrees.  Place three whole bananas on a baking sheet.  Roast until the skin turns black (approximately 15-20 minutes).  Allow to cool.  Take off skin and discard.  Add bananas to recipe.
